Rustic Toast with Cream Cheese, Caramelized Red Onions, Orange & Tuna
Ingredients
For 4 servings
4 thick slices of rustic multigrain bread
4 x 80 g cans of Rio Mare Tuna in olive oil
2 red onions
100 g soft cheese (goat cheese or cream cheese)
3–4 bay leaves
1 orange
20 g sugar
Extra virgin olive oil, salt, black pepper

Preparation
1. Toast the bread slices on both sides in a non-stick pan.
2. Peel the orange carefully, avoiding the white pith, and cut the peel into thin strips.
3. Slice the onions (not too thin).
4. In a pan, sauté the onion with a little oil and the bay leaves, season with salt and pepper. When the onions are soft and translucent, add the sugar and 2 tablespoons of water. Cook for another 2–3 minutes.
5. Peel the orange with a sharp knife, removing all the white membrane, and slice it thinly. Season with salt and pepper.
6. Spread the cheese on the toasted bread, add orange slices and caramelized onions. Top with drained, flaked tuna and orange zest strips.
