Tuna melt sandwich
Ingredients
For 4 servings
8 slices of rustic bread
3 cans of 80g Rio Mare tuna in olive oil
8 slices of cheddar or any melting cheese of your choice
120 g of mayonnaise
8 pickled gherkins
A small celery heart
1 small red onion
1 large tomato
A sprig of parsley
Butter

Preparation
1. Slice the celery very thinly, chop the gherkins and onion, and place everything in a bowl. Add finely chopped parsley, drained Rio Mare tuna, and mayonnaise. Season with a generous grind of pepper and mix well.
2. Spread the prepared mixture over 4 slices of bread, top with thin slices of tomato. Add the cheese slices and close the sandwiches.
3. Spread a thin layer of butter on the outside of the sandwiches. Toast them in a large non-stick pan until golden and crispy, and the cheese has melted. Cut each sandwich in half and enjoy immediately.
